National Pie Day? Um, no...

We celebrate Pie Day on PI Day, the real pi day, the date 3:14 every single year.
However, I will not turn down an opportunity to either cook, taste, eat or enjoy pie. So, with that, I share with you one of my favorite all time pie recipes:

White Trash Lemon Cooler PIE:

Ingredients

    1 quart vanilla fat free ice cream, softened
    1 can (6 oz.) frozen lemonade concentrate, thawed
    8 oz. fat free whip topping
    1 Graham Cracker Pie Crust (reduced fat)
    1 lemon (juiced and zested)

Tips

Put plastic wrap and tinfoil over leftovers while in the freezer.

Directions

1. In medium bowl stir together the ice cream, and lemonade concentrate, lemon juice and zest until combined. Fold in whipped topping. Spread in the crust and then freeze at least 4 hours or until firm.

2. Let stand at room temperature for 15 minutes before cutting. Garnish with lemon slices or mint.

3. Store left overs in the freezer.

Serving Size: Makes an 8 serving pie

Little Phyllo shells with diced fruit (mango) and whip with raisins and cinnamon. A lighter pie treat. 


An ode to my late Grandma Fern, who was the master of pie making. She always took the time to egg wash, to make art, to get out strange cookie tools and spread the sugar evenly at just the right time. A lifetime of wisdom gone too soon. RIP.
